Selecting “unknown” automatically un-selects other iconic taxa, and vice versa.
Step 1: Go to explore or identify page
Step 2: Go to “filters”
Step 3: Try to select both “plants” and “unknown”

To search for both Plants and Unknowns at the same time, just click the Plants icon, which gives you https://www.inaturalist.org/observations?iconic_taxa=Plantae, and then add ,unknown to the end:
https://www.inaturalist.org/observations?iconic_taxa=Plantae,unknown
