Specifically, I can’t find an option for a domestic yak (Bos grunniens)/domestic cattle (Bos taurus) hybrid.
I can find the bison (Bison bison)/cattle (Bos taurus) hybrid option but no yak/cattle option unless I’m just missing it somehow.

Yes, curators can add new taxa, which then allows users to identify observations as such.
You can request a taxon to be added by going to the parent taxon (in this case Genus Bos) and flag it for curation. However, a flag requesting the hybrid be added already exists: https://www.inaturalist.org/flags/636023
As it doesn’t provide a good source, you can add a comment linking to one. And if there’s no reaction within a week or two, you may need to tag curators (ideally ones familiar with the taxon), as this flag has been open for a while now
Thanks! I added a few sources. It was a bit hard to find good scientific ones (that weren’t behind a paywall…). I wasn’t sure exactly what the sources needed to show or prove, so I just added ones that gave some indication that yak/cattle hybrids exist. I’d be happy to try and find more detailed sources, if I know what info the sources need to show.
