I am trying to catalog observations that I find at my homestead. I acquired 55 acres a couple years ago and I have been getting to know the land and all the neat things on it. Is there a way to create a folder or something? I tried creating a Project but I can’t add anything to the project? Am I missing something? If this feature does not exist then it should…

When the place is created into iNat, you can modify your project and ad your place as a criterion to filter observations :

One caveat to using a collection project (for a user-created place of that size) is that it would only include observations with publicly visible locations. Any observations that have been obscured, whether the obscuration was added by the observer (for privacy or other reasons) or automatically (from an ID of something with obscured taxon geoprivacy), won’t show up in the project (and observations from near the edges of the place and/or with large accuracy circles may also be excluded). See this iNat help article for more info. Accordingly, if you want to keep track of all the observations on your property—including obscured observations—manually adding them to a traditional project is probably the way to go.

OK, you have a couple of different issues with your project.

Firstly, your project is a Collection Project, not a Traditional Project. You cannot add observations to a Collection project, they get added automatically if they meet the criteria.
Secondly, your project criteria at present say that the project will collect observations world-wide made by 2 people on September 14th, 2023. So I guess neither of you made any observations on that date anywhere.
So your project is not doing what you want it to do. You need to either create a Traditional Project that you can add things to as you want, or if you want a Collection Project you need to create a Place, as outlined in comments above. Then set the project to only collect observations made inside that Place. You also need to change the date criteria if you keep using the collection project, so that it doesn’t have a specified date.
By the way, since the option is rather obscurely presented: to create a traditional project, you need to scroll past the two large buttons for collection and umbrella projects on the project creation page to the very last paragraph on the page, where there is a text link for creating traditional projects.
