How often do you find variegated plants in the wild?

Sorry to burst your bubble, but the entire species is like that. I don’t think it counts as variegation any more than a striped zebra would be.
A lot of Euphorbia have spots or colour gradients on their leaves. Stripes are less common, but within a species not terribly variable.
If you want to see variegated Euphorbia, you can look at Euphorbia x martini, a hybrid which is closest to Euphorbia characias. I’ve seen thousands of E characias at this point and the only variegated ones I’ve seen have been in or near gardens.
