Do we have unique IDs for specimen like heritage trees or wild mammals which are named by organizations or Authorities?
Nope, iNat only allows IDs of taxa. Perhaps there is an observation field, though?

No.
There is however a space in an observation for information such as this in the notes section. You can write pretty much anything you like in the notes about the organism you’ve observed so if it were a named heritage tree or wild animal you can write that down there.

Or you could create a traditional project, then add suitable obs yourself.

Yes, an Observation Field can do what you want.
There is an existing field, Specimen Code, that might work for you.
There is an observation field, Tree Name, for individual trees that have been named by a community.
