It wasn’t too obvious how to set it up. You have to create a “traditional” project, make “Preferred membership model” to be ‘open’, and “Preferred submission model” to be ‘project curators’. ie anyone can watch if they want, but only you can add & delete. It was the only way it worked. Otherwise you can’t add anyone else’s ob’s. I changed the name too:

The benefit of projects is they are made for collating & filtering

I was just thinking about this earlier, I’m happy to see that someone’s already posted this for me! I would love to be able to organize my favorites more, and I agree with others here who have said that custom categories would be wonderful. Maybe we could have our favorites organized like our lists page, but instead of lists of taxa it would be lists of observations? It would be so nice to keep my “what a lovely photo!” faves separate from my “wow, what is that?” faves.
