on a PC, I see that there are secure options to login to this forum such as 2FA, but not to iNaturalist itself. I can choose to login to the forum with my iNat account but not the other way around which would make more sense to me as it has the more secure login. Am I missing something?
I don’t think so. The iNat Forum is separate from iNat. It runs on the Discourse platform, so they have different options.
Have you considered “Sign in with Apple” or “Sign in with Google” on the iNaturalist login page?
Yes, I did, but it isn’t an option for me.
If iNat felt they needed to implement 2fa because they’re looking for more protection from bulk attacks on their systems… I’d of course suck it up and put up with it. But for an individual user, 2fa is an annoyance at best, especially when what’s being protected - my bug pictures - can’t be profitably monetized. And it’s not infallible. For individual users, a strong password is still your best protection, assuming you never use the same password for more than one account.
A better alternative to 2fa proliferation for individuals is a good password manager like KeePass. And it keeps companies like Apple and Google from tracking your every move all over the internet. ;-)

Although sometimes what is valuable isnt material, but time. The time somebody puts into an account. 100s, 1000s of hours.
Amen to that. And now that you mention it, it’s a shame that all that effort isn’t so valuable to the masses that crooks DO want to steal it!
I’m not worried about theft but, do worry about someone getting in and deleting observations or the account.
