I piloted a project in my undergraduate course over the summer and it will be expanding with a new group of students this fall. As the owner, I would like to be able to correct and curate information in Observation Fields submitted in the existing student observations. Is this possible and if so, how?

Unless the user specifically blocks it, which can be configured in the user settings, any user can add observation fields to a record.
You should be able to edit data in them by just clicking on the name of the field and edit will appear.
Welcome to the forum! It sounds like your pilot was a success! I cannot really do much annotation on my iPhone, but the website annotation fields work for me.
