I wanted to make 2 projects on iNaturalist: one for churchyards and cemeteries, and one for brownfield and abandoned sites. When I tried to create a project it asked me to select a location. I left it blank and then it just included all my observations on iNaturalist. How do I tell it to only include observations people specifically add to the project?

you created a collection project, which automatically collates observations based on a set of filters. What you need to create instead is a traditional project, which allows manual addition of records. At https://www.inaturalist.org/projects/new, scroll down and click this hyperlink:
